The Meaty Eggplant from Chef Edward Manilla is a vegetarian pop up featuring the fun side of vegetables! Big flavors, colorful dishes, and fresh farmer market finds will help satisfy all your eggplant cravings.

Chef Edward Mannila is an alumni of Northern Michigan University’s Hospitality and Food Management Program. After working at the University of Michigan’s Dining ServiCes, he came to Chicago to work in the world of desserts and baking. Despite his sweet tooth, he’s passionate about healthy cooking, and specializes in vegetarian cuisines.

Come experience Chef Edward's food on July 26th at Fathom from 4-7pm! Doors open at 3pm and Fathom remains open after the event until 11pm.
